    Holiday Root Veggie Mash

    This recipe is simple and a great substitute for mashed potatoes.

    Try it!  Your waistline will thank you!

     

    Boil or steam turnips, rutabaga, parsnips and celery root until tender. Reserve liquid.

    Mash with a hand masher (for thicker mash) or a mixer (for smoother mash) adding some of the liquid, a little at a time, until the desired consistency. Add a small amount of butter or olive oil and spices, such as rosemary, sage , thyme, sea salt and pepper.

    Gently fold into mixture and serve.
