• I hope you enjoyed my last blog on Mother’s Day is a Gift.

    Remember that if you are a mother, plan ahead to taking care of yourself, either on Mother’s Day or soon after.

    I thought that having a nice breakfast on Mother’s Day would be
    a great way to start the day off. Here is a Gluten-Free Pancake recipe that you can try click here for the recipe:

    4 eggs
    1/4 cup coconut flakes
    1/4 cup coconut milk
    1 Tbsp raw honey (optional)
    1/4 tsp vanilla extract
    1 pinch cinnamon
    1 pinch nutmeg (optional)

    In a large bowl, whisk the eggs really well. Sift in the coconut flour, and quickly whisk to mix well. Add coconut milk, and continue to mix well. Stir in the honey, vanilla & cinnamon.

    Use butter or coconut oil to grease a pan over medium heat or a griddle at 325 degrees F. Pour 1/4 cup batter onto the pan for each pancake, allowing each side to brown before flipping. (Check to avoid burning!) Enjoy!
